Hey Joe! I just ride my singlespeed mountain bike with a 32/18 gear setup. Going fast in the cold just increases the wind chill, and even tho you get great traction with studded tires, I still don't like going too fast on ice. Running a singlespeed is also nice because you don't have to worry about dérailleurs and shifters icing up.
Deep snow, anything over 4" deep, but also depending on what type of snow, fluffy or wet, is a lot like riding in soft sand or mud. Not much fun unless you like that sorta stuff.
For my snow riding, I like to go to the nearest "rail trail", where the snowmobiles pack the snow to a hard and sometimes icy condition. With studded tires, it feels like you're riding on dirt. Most singletrack trails, if they aren't closed to bikes for the Winter, get pretty bumpy, and very difficult to ride, because of hikers and snowshoes, so unless you're in very good shape, (I'm not) and don't mind falling down (I do), it's not as much fun (for me) to ride singletrack in the snow.
Right now, most of my trails in the back yard are groomed for XC skiing, and I don't want to mess up the ski trail, so I don't ride back there when there is enough snow to ski on.
